David Tanis was the chef at Chez Panisse for nearly 25 years, he writes the always informative and inspirational City Kitchen article in the Wednesday New York Times food section, “One Good Dish” is the third of his highly regarded cookbooks, (the second of which was nominated for a James Beard award), and most importantly, David Tanis is a really great man!
